funny story involving a similar situation, was on a server (a while back) and playing as engineer. I was auto balanced to the other team, and went soldier. For some reason, my sentry and dispenser didn't despawn when i was switched, and it proceeded to kill me, and the rest of my team over, and over...

You can't stab while cloaked.
You CAN stab while disguised, but it makes you lose the disguise temporarily.
Sappers don't cause disguise loss.
There's a quick disguise button you can use, not sure what it's bound to.
